This lightly-aged rum is slightly dryer than most, with just a hint of sweetness that lingers after each sip. It's got some nutty and oaky flavors too, picked up from four or five months in new American oak casks, which also give it its beautiful golden color and mellow warmth. Van Brunt Stillhouse starts with organic, unprocessed sugar from small family farms, then distills it in small batches. Every step, from fermentation through bottling, is done by hand. Due North rum was created as homage to the time before Independence, when distilleries all along the Northeast coast would import molasses (a waste product from the sugar plantations in the Caribbean colonies, thanks history class) to make rum. TIP OF THE TONGUE We recommend sipping it straight, with a tiny splash of water to bring out every flavor. If you're in a cocktail mood, try a classic daiquiri: Combine 2 oz Due North Rum, 1/2 oz simple syrup and 3/4 oz freshly squeezed lime juice in a cocktail shaker with lots of ice. Shake until very cold and strain into a chilled cocktail glass.
