Beaune-Greves is on a very steep slope. Its name probably comes from the French word ?graviers? (small pebbles), due to the abundance of small rocks mixed with brownish soil. The vines of the Domaine are planted in Pinot Noir fin. Their density is extremely high and the pruning very severe. No fertilizers nor weed killers are used. The grapes are hand-picked and brought to the Drouhin cellars in small crates. Joseph Drouhin?s wine-making technique remains traditional, fermentation occurs in wooden vats with punching down of the cap and pumping over the juice. The wine ages in oak barrels for almost two years and is fined with egg-whites prior to bottling.

Wine maker notes
Winemaker Jerome Faure-Brac wasn?t wild for the sun-drenched 2015s at the beginning owing to their deficit of acidity (none of the finished wines have as much as 4 grams per liter). But the wines didn?t change much during the secondary fermentations due to the lack of malic acidity. The lees were also very clean so Faure-Brac kept as much of them as possible, which he believes contributed to the ultimate freshness of the wines. They finished tactile and saline, with some evidence of tannins. ?It?s rare that we have such a combination of richness and tension,? said Faure-Brac, ?and of course it?s an amazing vintage for the reds. ?

Food pairing
Site: a famous vineyard, recognized as one of the best Premier Crus of Beaune, Greves is at mid-slope, at the northern end of the appellation. Joseph Drouhin owns a large parcel on a steep slope dominating the city of Beaune. History & tradition: the name is derived from ?graviers?, small pebbles or gravel found on the soil of the vineyard. The Romans had already recognized the potential of the hillside overlooking Beaune and planted vines there. Some of the vineyards were separated by small walls and paths which are still extant today. Soil: small rocks mixed with brown earth.
