A purposefully tradtionalist distillery, no shor cuts are taken in time, investment and production of "the best glass" (Kingles Amis). Alongside its unusally small handbeaten copper stills, The Macallan is perhaps best known for its insistence on sherry aging. The Macallan malt whisky is matured excluvisely in sherry oak casks from the bodegas of Jerez, Spain. The Spanish oak casks are hand-picked annually then seasoned for three years with the finest Oloroso and fino sherries.
