The Macallan's reputation was built on two pillars: small oak sherry-seasoned casks and low yields from small stills. The sherry cask has imparted its characteristic dried fruit richness — figs, raisins, candied orange peel — while the spirit underneath remains firmly Macallan: full, oily, and intensely malty.
