Featured in the 1001 whiskies to try before you die book (2011 Edition) Kilchoman's 3rd official release of fully aged whisky Matured in bourbon barrels for 3 years and then finished in Oloroso Sherry butts for 3 to 5 months. Nose: Mossy green vegetal notes with a smoked mocha hint along with white pepper, fennel, green herbs and subtle sherry soaked sultana and earthy smoke. Palate: Green fig, salty lime, peppery spice, smoked nutty nougart, aniseed, sooty vanilla. Finish: Green peppers, fennel, smoked mincemeat, sooty sherry, mossy coastal notes. Great complexity for a 3 year old, well balanced mix of Bourbon & Sherry cask and distillery character working in unison.
