Produced at the Cave de Lugny co-op, this legit, super-bargain Macon hearkens back to a time when a modest, unoaked French Chardonnay was the vin du jour on many a New England dinner table. Having witnessed numerous misses in our tastings with importers, we know that it's difficult to get unwooded Chardonnay just right. The balance of fruit to acid and mineral to floral must be just so. In La Cote Blanche, tree fruits and pear blossoms flow seamlessly along the mildly glycerin-like textural feel which funnels to a properly dry finish. There will never be a wrong time to crack the cap here, for this Macon's versatility is inherent. Food Pairings: Miso Grilled Salmon; True Grounds' Curry Chickpea Salad Wrap; Garden Veg Terrine
