This wine is made of 100% Chardonnay from vines with an average age of 35 years. Fermented with native yeasts in stainless steel and elevage on its lees for around 6 months. A youthful, floral nose, and a medium bodied palate of sweet yellow apple and apricot. We would pair this with grilled prawns, or grilled peaches drizzled in olive oil, topped with lightly fried prosciutto and goat cheese. The 2016 Pouilly-Fuisse Les Vignes du Chateau is a bright, pale gold. It is very open on the nose and expresses notes of hawthorn, acacia blossom and citrus fruit, entwined with a light touch of spice. The attack is crisp, with good acidity, but this develops gradually to give the impression of fullness. It shows pronounced notes of candied citrus fruit and a zesty mineral finish.
