You will find balanced hints of barrel spice, leather, and a herbaceous note of sage on the finish. Roast beef dinner with all the fixings, stuffed pork tenderloin or roasted chicken. Mushroom risotto with grilled asparagus would be a great vegetarian pairing. Gorgonzola and most blue cheeses would pair nicely.
