Romain and Damien Bouchard began this Domaine a few years ago, but they already have access to some of Chablis' best sites, which they farm organically. Using only indigenous yeasts and minimal SO2, the brothers produce classy, terroir-expressive wines that offer very good value. One of Chablis’ coolest premier cru plots, ‘Vau de Vey’ sits on a very steep slope and faces east. Green apple, crushed oyster shells, tons of energy.
