Tamanohikari dates back thirteen generations to 1673 and is based in the ancient capital area of Kyoto. They are known as revivalists of the junmai style of sake, using 'henpei', a flat rice polishing technique. This beautifully balanced dry junmai ginjo is herbaceous with notes of tofu, fresh rice cake, bamboo, and peach. Try pairing with Salt & Pepper Chicken Wings, Edamame, or Veggie Tempura.
