This bright & refreshing sake is Doi brewery’s flagship sake. Melon, pear & banana drive the aromas & combine with a subtle sweet touch, highlighted by a subdued acidity in the butter-tinged flavour. Great depth and plenty of complexity. 'Kaiun' means “to welcome luck” in Japanese. With that sentiment, this sake is often bought as a gift to celebrate the New Year, weddings, and other happy occasions. This special tokubetsu honjozo sake is brewed using Yamadanishiki rice polished to 60 percent – a polishing percentage that’s usually required for a ginjo-style sake. It has fresh fruity notes, a crisp, dry taste, and a refined flavour palate, making this one of Kaiun’s bestsellers. It can be served cold or warm.
