Maison Perron de Mypont, situated in the historic village of Puligny-Montrachet, is a revitalized estate dating back to the 15th century. In 2019, renowned Mosel winemaker Ernst Loosen acquired part of the Vieux Château de Puligny-Montrachet and, alongside Burgundy expert Manoël Bouchet, embarked on a mission to craft wines that honor Burgundy's rich heritage while embracing modern winemaking techniques. Wine Description: This Bourgogne Chardonnay is a harmonious blend sourced from select parcels across the Côte de Beaune, Côte Chalonnaise, and Chablis. Harvested during cool mornings to preserve freshness, the grapes underwent whole-cluster pressing and native yeast fermentation. The wine matured for nine months in used French oak barriques and 600-liter demi-muids, enhancing its texture without overshadowing its purity. The result is a vibrant Chardonnay exhibiting aromas of white fruits and delicate flowers, underpinned by a fine mineral structure. Food Pairing: This Chardonnay pairs excellently with shellfish, pasta dishes, rich fish like salmon or tuna, mild and soft cheeses, and cured meats. These pairings accentuate the wine's freshness and complexity.
