This intense but elegant red offers appetizing notes of red raspberry, wild herbs, and spice. Pinot Noir grapes are hand-harvested from sustainably-grown 10 to 40-year-old vines before being destemmed and undergoing a brief cold soak. The wine ferments before 70% is aged in 500L and 228L barrels, and 30% is aged in conical wooden vats (10% new oak) for 12 months before bottling. Domaine du Pre Semele lies in a tiny valley a few miles northwest of the hilltop town of Sancerre.
