Maison Saint Aix is situated in the vineyards of a 140-year-old domaine at one of the highest elevations in the region. The Mistral wind keeps grapes dry and healthy. Grapes are harvested in the cool early mornings, preserving delicate aromas and minimizing oxidation risk. The grapes are directly pressed. The must is maintained at 41F for 5 days to extract maximum aromatic compounds, followed by fermentation in stainless steel tanks at 59F. All transfers occur in an oxygen-free environment to prevent oxidation, resulting in a beautiful pale straw color with hints of green.
