100% Sauvignon Blanc grown in calcareous clay soils [70% Terres Blanches (white earth), 30% Caillottes (little stones) with limestone subsoil]. Organically oriented with environmentally responsible viticulture, no chemical herbicides or anti-rot products are used. After a long, gentle pressing and cold stabilization it is fermented 3 weeks in stainless steel, temperature-controlled tanks and aged on fine lees with bentonite and cellulose filtering before bottling. A harmonious, fresh cuvee to be savored with grilled fish and seafood as well as on its own as an aperitif.
