Vineyards. The Richoux estate includes 20 hectares sitting withSouth, West, and Eastern exposure. Vines age 30-35years for their Irancy bottling, with moderate tomoderately steep slopes. Soils are similar to Chablis,sitting only 15 min away â PredominantlyKimmeridgean with some clay and other limestone. . Composition. 100% Pinot Noir. Viticulture. Low yields are achieved through organic and biodynamic methods and no irrigation, only 9hl/ha. Vines are hand harvested in fall. . Winemaking. Grapes are 100% destemmed prior to a 3 day cold soak. A 2-3 week fermentation started with native yeast in stainless steel occurs prior to elevage of 26 months. 2 months in stainless steel, followed by 24 months in 300L tuns.
