A beautifully expressive Chablis Premier Cru, the 2023 âLes Vaillonsâ opens with an inviting bouquet of white flowers, citrus and fresh orchard fruit. The palate is full-bodied yet vibrant, with a refreshing tanginess and the characteristic mineral tension of Kimmeridgian soils. A deft balance of richness and freshness carries through to a long, elegant and delectable finish. . Sourced from several Climats on the Vaillons hillside, primarily Epinottes, where clay-rich soils bring added depth and aromatic complexity. The wine is gently pressed and fermented and aged on its fine lees, with 90% in stainless steel and 10% in older oak barrels, allowing the purity of the fruit and terroir to remain front and center. . Serving: 52â55°F (11â13°C). Drinking Window: Enjoy young or cellar for 5â7 years. . Pair With: Fish and seafood, whether grilled or served with sauce; roasted poultry; and white meats. Particularly delicious alongside seafood crêpes.
